is there a guide on how to fly the plane/copter?

It's pretty easy. If you need a guide to use a spoon, I could see needing a guide to fly the BF:2 aircraft...maybe.

naw its not easy for the newbs.. they dont realize they have to use a joystick and the keyboard at same time for max control over helos/planes...

i use a joystick with a throttle that i keep set just barely above minimum stall speed then use WSAD for throttle and rudder control while using the joystick to actually fly...

had to learn that method to even take off in DC and it works well now too..

That's a newb setup you've got there. For proper control you need a joystick with rudder and of course throttle. Designate buttons for primary/secondary fire, map, map zoom, use the hat at the top for inside and rear view and have two buttons set for eject/parachute.
I also have a button set to bring up the scores.

Having buttons means you're at full lock/power or nothing which makes it crap for precision aiming. Now that we have lamo guided rockets it's not quite as important in the aircraft, but if you're using the canon and need to aim a foot to the left, the buttons would be no good.

Edit: also it's virtually impossible to hover in a controlled manner in a heli using the buttons, not unless you're up for franticly tapping the buttons to try and get some kind of balanced power.

It took me a couple of weeks of dedicated practice to be able to fly the helicopters well. I think the heli's in BF2 don't recover as well as DC and you can't throw them about nearly so much. The planes are also much easier. I'm not especially happy about this as I like a decent fight against someone who's been practicing for months and can preform some nifty tricks.

These days I can hover a regular jet in DC, back off the power and make it fly backwards to about 20 feet off the ground and recover.
Not useful, but looks cool and annoys the opposition when you do it over their home base.

It's OK, but they should have learned a lot more from the highly successfull Desert Combat mod. Flying the helo is nearly impossible at best (I'm an apache guru on DC... I shoot down f'n fighters down with that thing occassionally), the guns aren't nearly as effective as they should be, they removed the F+key reporting so it's a pain in the arse now to convey messages (and vastly more time consuming). The improved graphics are nice, as well as the sprinting feature, I prefered that you can run all the time, but it does add a nice new level of realism.

DC Choppers did things real helocopters cannot do..
they do not fly that way at all..
even the DC team was not happy with them...
the only reason people like them is becasue it kept only a select few good pilots flyign them..
the DC chopper model was horrible.. and I was good with it..
but now Im a god with the more realistic BF:V/BF2 chopper model..
it flys alot closer to the real thing...

blades and hover effect and torque are all modeled now..
in DC they had to use the flight model for a plane and give it a verticle axis..
it just didnt work as well as it could have...

if you doubt the realism of the flight models.. ask some military or civilian chopper pilots if thier birds can do what they do in DC...
BS ! BF2 choppers flight controls suck..my dead cat can fly now...Im bitter because now, everybody is as good as each other. they fly like your on a string or in ghost mode....doesn't 'feel' right at all I have to dive bomb to hit ground target now as opposed to pitching down temporarily...garbage!

not everyone can fly.. everyone can take off and move that doesnt = fly....
and real helos perform that way...

I guarantee I can fly circles around most people on BF and DC.. BF2 chopper is very good.. its much closer than DC was to a true helo flight model...

PS i have 10 hours in the US Navy UH-60 Simulator I used to know the guy while I was in the Navy and got flight time =P
same thing with the old F/A-18A/B simulator at NAS Cecil field.. I got about 20 hours flight time here =)

I can say without a doubt that DCs helo model is total garbage..

lol, the funny thing is I found the DC choppers easy to fly and manuver with, especially the apache but I am having a harder time with the BF 2 choppers. I never use a joystick, just mouse plus keys and that always worked on DC but now my flying could use some work.

What else?

exactly. sometimes, the calssics are just better. sure you can amke thing with more features like gfx and sound but in the end the classics are just better. Wolf3d>DoomIII. Civ3>any other turn based game, BF1942>BF2, Mario World>Mario 64/sunshine/ds/other crap.
