A couple of us are chipping in for a bison this weekend... Paying $1 per pound live weight. I'll try to photo-document the process to show you what bulk meat is really like. :p

I don't know what the final price will work out to per pound of meat... We don't have to pay a butcher; the only additional costs will be for wrapping/sealing the meat.

Anyone have recommendations for bison meat?

Save the hide for keeping you warm in the winter. Tan it properly

Tongue is supposed to be a delicacy.

Last couple of steaks I had were very lean and tasty

Anything that calls for lean meat. I have used it in chili a few times, and the nice thing is, you don't have to skim the fat like you would with beef.

Gotta make some jerky if you can as well, it's decent.

I had a bison burger once, but it was undercooked and made me sick. Tasted good at the time, though. I thought "rare bison must just taste different".

What what are you getting? Like, 10 lbs?

you have hunted 112345 pounds of meat, but you could only carry back 62 pounds. :)

It's good, but not as good as beef. Still it's great because of it's leanness.

I quick look online says an American bison weighs between 900 and 2100 pounds. The largest bison recorded was over 2500

Yeah, but nothing beats bald eagle, with a side of freshly slaughtered baby seal! If only we still had the dodo-bird sauce to slather it all in!!

DrPizza, it's a good thing you're in NY, or I might have to stop by and bug you til you shared a bit of bison! Lucky you are!! :)
