I saw this recipe on PBS last weekend and I'm trying it out tonight:

replaced andoille with chorizo, though... I could only find pre-cooked andoilli in the grocery store and I like to strip the sausage out of the casing before cooking it. probably wouldn't bother with bone-in chicken either. it's kind of a pain in the ass to have to work with.

I definitely prefer andoille over chorizo, but I hate buying precooked sausage.

this is just me being a freak, but I really hate sausage casing and I find it to be neigh impossible to strip the casing from a precooked sausage.
