He's trying to kill them? I'm fine with it. assuming there are no other options available to them. Also assuming police officers don't wear stab vests in America and aren't trained to deal with a guy with a knife without killing them.

This is an even more reprehensible position than people are giving you credit for. You're not morally opposed at all to someone being killed in self-defense. You just believe the state should have a monopoly on that force or that only those agents authorized by the state should ever be permitted to employ it. This represents the same kind of paternal elitist attitude that was essential to every police state (and especially more brutal collectivist ones).

There is no such thing as a stab vest, at least none that are all that effective. Slash vests, yes, but they offer limited protection from pointed weapons.

In life, there are high stakes and there are low stakes. If the stakes are low, you can afford to mess around and find the best solution for everyone involved. When the stakes are high, and there is much to be lost, you shouldn't expect such perfect solutions. In some situations a person may reasonably assume that their life is at stake. It's always possible that they are wrong, but choosing a response that would fall short of defending their life is foolish.

It's not that there are only two things that could have happened in this situation. It's that only one of them is relevant when choosing a proper action. Hope for the best, plan for the worst. Act with maximum force when you are in danger of losing that which is your dearest possession. It is the most logical response, and because morality is ultimately based on logic, it is the most moral response.

No, it is not known that someone is going to kill the other person until they do it. They could always have a change of heart at the last second, or even trip and fall right before they do it which would give the victim a chance to get away. There is no possible way to know until they actually go through with the act.

I wasn't there either, but apparently the cops that looked over the evidence of what happened agree that she acted reasonably, given her options.

Here is what you can't seem to understand:
It is all well and good to list all of the options she had at her disposal while you're sitting there at the keyboard.
Now, being in the heat of the moment confronted with this actual situation at her most vulnerable (in the shower) having already been attacked and being able to fend him off long enough to extend her life... she has a couple seconds to make a life/death decision and you are expecting her to...
1. Stand there and compile a list of new options to fend him off
2. Weigh the pros and cons of those remaining options
3. After already having been attacked in the dark, aim the gun at him and tell him to fuck off.
4. Have the marksmanship while trembling with fear (not to mention it being 6:30 am and hurting her back in the first attack defending herself) to shoot him in the foot and or arm.
5. Come up with another method since the shower curtain rod did not work.

She was shooting to disable his ability to attack her. If he was killed, then that is a result of his decision to attack her.
That is the whole point of this. Until you are in that situation where for all you know you are a second from death, you can't say what you would do. You don't know that. But to condemn her for her reaction to that real-life split second life/death scenario, you are a real piece of work.

2. If she somehow manages to shoot him in the foot, he is likely to try and take her out with his knife and brute force.

He has already shown the willingness to break into her house and attack her with a weapon; he's not going to look at the gun and suddenly turn into a docile house pet. She has seconds, if that, to disable the guy to the point where he can no longer attack her, and the best way to guarantee that is to shoot him as often as possible in the best places that are likely to take him out of the fight. That likely results in death, which is perfectly acceptable in this case, because the alternative would likely have been her death.
