I do agree that the Dell PSU is probably undersized but wouldnt that still let you adjust the settings to a high level and then just crash...
stock intel hsf??? Entirely undersized if so... at least imo. Ive heard about the same temps from others with that setup. Im basically half of yours with the E6600 and at half the temps... with the TRUE120 and fan.

Okay weird update...
I reinstalled windows to get a fresh start and just like that I was able to see the SLI options and configuration. I start up the machine this morning and... GONE!
I did get a BSOD though which propted me to disable the JMBmicron sata controller... so... (dumb)...
