I LOVE the ambient music form Anachronox. Great game still and I wished they'd release Anox 2. I want to know what happens!
 
Dear God,

You guys have to listen to the CD that comes with Silent Hill 3. You will laugh from how horrible it is!
 
Hitman 2, Homeworld, Total Anihillation, Command & Conquer

GTA 3: Vice City has some good tracks, but also lots of annoying ones.
 
The in-game music of "The Dig" (A Lucasarts adventure game from the age of DOS) was incredibly good, I cannot remember any other game where the music helped so much to enhance the gaming experience. I tried to order the soundtrack CD (they actually released it) directly from Lucasarts, but for some reason it never happened... Maybe I'll look it up on Amazon on ebay...

The HOMM games had some pretty good original music, and I agree with the sentiment on homeworld's soundtrack. I liked Quake 2's soundtrack also.
 
MGS2
MOH, all versions had pretty good music. My favorite is PS2 version main menu tune.
BF1942 theme is good, so are DC and EoD main themes.
