Priest is the best for 1v1 PvP if played correctly, but it is the hardest class to play, IMO.

I dunno what priest you're talking about, but my so far only Holy tree priests do pretty well soloing two or three yellow mobs at a time if they need to. Definitely have an easier time soloing sub 30 than my warrior does for instance. They don't kill FAST like my rogue, but do pretty well at handling tough situations. Once you get 2 points into improved flash heal, you are virtually unkillable in most solo PvE situations.
(horde priest is 2 bubbles from level 30, alliance priest is half way though level 28)
I can understand if you're comparing him to a hunter, who is like THE solo PvE class. But solo PvE is pretty easy with any class. At least sub-30 (I have 8 characters of various classes that are level 30 or less and only one above 30... I like variety)

not against an equally skilled shaman. Earthshock and grounding totem own any priest.

The priest has only the fear type spell and power word: shield. And shackle unead, if you want to count that (which is pretty useful in darkshire, BTW).
