Go to the peak, it is a contrasting view in daylight and night time... You can go the Disney in HK, but it is mini version of the Disney in the states... You can go to Ngon Ngon Ping 360 cable car, I haven't been there personally, should be a nice ride... You can go to the outlying isalnds and enjoy some rural life... For dining out, try out Felix on top of the Peninsula in Tsim Sha Tsui, ass-kicking view for dinner
