What's stopping the supermarkets from just firing all the union employees and hiring the temps that they got as perms?

Partly because of contractual agreements with the union, and partly because they would need to retrain an entire workforce with no one to do the training.

strikes usually don't happen when there is a contract... because that is a breach as well...

If you don't, you lose your best employees to competitors who have unions because they want job security. In some industries that's ok - I think a supermarket could risk it outside of the meat/fish department and even there they could make up for it with better salaries/benefits.

Edit: This isn't talking about banning unions, which is illegal - I'm suggesting why a business would negotiate with one instead of just releasing people when they demand better wages/benefits.

Striking Union workers can be legally fired. If there's no contract (hence the strike), then there can't be a breach of contract if they're fired.

However, unions can apply indirect pressure on the employers. For example, "sympathy" strikes wherein the delivery truck drivers join in the supermarket strike. Bad publicity.
 
Once the collective bargaining agreement has expired, Union workers can be legally terminated for job abandonment. Its still not good business sense to replace striking employees with permanent workers unless management is dead sure that they will win the strike.

Chicago Land Area garbage workers had fun for the past week or so, tey were on strike to get better health benefits or something like that.

Not sure if they had a contract or not.

Why do unions work?
Without some kind of checks and balances, they don't. Unions become a self-inflicted level of beurocracy funded by the workers, whom have almost no control of them. They were a good idea back in the time but are now what they originally served to defeat.
 
Unions are a polyp on the anus of society. Some people need and deserve help, others hide behind it as an excuse to not work. It's not about talent or work ethics, it's about an old boys network where sons and daughters are given preferrential treatment. It served a purpose at one time, now it's just driving the economy lower.

Now that statment is true; however, unions were needed because employers were raping the employees. Now the unions screw over the companies. Unions are the main reason US is not #1 in productivity.
We don't need unions now. And especially the teachers union, my parents moved because they would not fire a teacher--a coach--even though over 30 families proved that he was a mental child abuser--tenure=dont fire child abusers. The paper (Milwaukee Journal Sentinel) even wrote a story about it and this year my brothers new school will play his old school. Most of the parents from the old school will sit in my brothers new school section--all but 2.
FYI--my brother was not mentally abused. My brother was treated like the second coming--6'4" sophmore and a great shooter. My dad heard the stories and dug deeper--contacted many former players and when others heard what was going on they stated to contact him. Stories that would break your heart and they just dont end. My dad isn't one of those over protective parents--his motto someone picks a fight with you then show him why it was a mistake for him (but NEVER start a fight).

Left out the names of the "teacher" and school for a reason, so don't ask.

Remember the longshoremen union strike(not getting paid 100k+ a year for checking and unchecking boxes on pieces of paper)?

Unions work by putting some of the power into the worker's hands. Sure they can fire everyone and rehire new people but they'd still be down for some time while people learn the system and are hired. Like them or not, unions have helped pretty much everyone. Like your 40 hour work week? Thank the unions. Like having two days of vacation? Thanks the unions. Like getting paid extra for overtime? Thank the unions.

Unions are typically best in situations where there is a large workforce working for large companies. An individual worker can get fired and the company wouldn't even feel it. However, if they had to fire 1000 people thier bottom line would feel it.
