The first (and last) salmon I ever had was smoked. I tried it a few weeks ago. It was many things, but good wasn't one of them.
Other than that, I'd have to say it's the fact that the food is completely enveloped in flavor without being burned or diluted. It's a wonderful process.

It was horrible. I don't guess so many people can be wrong about salmon, but I think I'm going to wait until I'm in a restaurant in the Pacific Northwest before I try it again.

There are different ways of smoking salmon - cold smoking or hot smoking. I'm guessing you had cold smoked salmon which I too find disgusting.

liquid smoke but its meh
the spice cumin gives things a smoky flavor, though it isnt smoked. smoked paprika is smoked and gives a nice smoky flavor, though neither are quite as good as real smoked food.
