Why do smoked foods taste soooooooo good?

Because it's cooked with flavor and not just heat. Seriously though I think there is an actual scientific process going on I just can't remember what it's called.

Other than that, I'd have to say it's the fact that the food is completely enveloped in flavor without being burned or diluted. It's a wonderful process.

It was horrible. I don't guess so many people can be wrong about salmon, but I think I'm going to wait until I'm in a restaurant in the Pacific Northwest before I try it again.

I love smoked salmon. It's one of my favorite smoked foods. I particularly like the gift box type, that has the salmon in a vacuum sealed mylar pouch. Delicious :^)

Yeh, appetizer (cold smoked) vs entree (hot smoked) yeild two very different flavors and textures. I find the cold smoked stuff revolting as well. But the salmon I do on my charcoal smoker is to die for. A slab of chinook or sockeye just melts away.

Is the cold smoked stuff the kind you get with a bagel at a deli? If so, I like that also, but not as much as the other kind.

Depends on how it is smoked though. There is the natural and then the fake smoke done with things like liquid smoke.
When I was growing up there was a man that lived near me who made his own smoked hams. He had a smokehouse and he killed his own hogs. He sold them for about $20 more than the stores. It took him months to produce a ham. They needed no refrigeration when he was done. Sadly he is dead now and the art of smoking seems to be dying out. Everyone just buys the stuff in stores without really knowing how it got there.

Yeah it is crap
I don't think people realize how many things sold as smoked actually are never smoked but just added flavoring.

Cumin, paprika, chili, cayenne...all good ingredients for a good smoking rub.

xSauronx - Do they still do the Smoke on the Water festival up there in Washington? I've never been up there for one but had heard they have a BBQ cook off during the festival.

Was It cold smoked or hot smoked?

Cold smoked is the best...Gravlox is excellent too.
