A lot of fear of rare-type meat is that the redness is from the blood. I remember reading somewhere, though I don't have the source, that the red color is related to some from of nitrite in placed in the meat. But isn't the redness also the color of the myoglobin in the meat? How much actually blood product is an a butchered piece of meat?

I don't like my steak to be red and dripping. It's a mental block, and I'm not going to get over it anytime soon.

I order mine medium well when I am at a good steak house, and there is a smidge of pink, which is a lot for me, since I used to refuse to eat steak with anything pink inside.

Heck, I was over at my parents this weekend, and my mom made steaks. The one I grabbed was between medium and medium well, and it freaked me out, so I stuck it in the microwave for a minute. That might be blasphemy, but I enjoyed it once the pink/red was gone.

Mine has nothing to do with fear of the blood, I simply do not like the taste that way.

I prefer medium rare to rare, but the GF always gets well done- at a nice restaurant, even her well done steak is pretty damn good....much better than anything I've gotten rare from outback and the like.

No f'n way. Well done steaks are tasteless compared to rare/med rare.

when you order a well done steak, you get the oldest ugliest piece of meat they have. Order rare to medium rare if you want a fresh steak.

everyone in the kitchen is told to save the older pieces for well cooked meals... and give the newest pieces to those who want R/MR.

Well done steak eaters are pussies or have way too many mental hangups. It's like people who shudder when they drink milk because they can't stop thinking about how they're drinking another mammal's baby food or picture the udder all squrting and shit. Face it, you're a filty animal whether you like or not. And if you think that well done meat tastes fine, you either have dead taste buds or like seriously bland food. And if meat that is a little pink tastes "bad" to you, then wtf are you doing ordering steak? IT'S MEAT.

Medium is fine. But well done? That's like buying a dozen roses for your girlfriend and insisting that the florist squeeze the fragrance out and paint them grey.

Exactly. There seems to be a glut of incompetent chefs out there who just aren't even willing to try to cook a well done steak properly.

BS. You've only been served by chefs who don't know how to cook well done. It's all this steak nazi-ism. Like other posters have said, some idiot chefs will give you a bad piece of meat because they're steak nazis and don't care how YOU want your food--what makes you think they're going to bother trying to cook it well if they won't even bother to give you a good steak?

My wife likes her steak done well done. Effing shame. I make nice ribeyes or T-Bones at home for myself and get her a half pound sirloin and burn the shit out of it hehe. Not going to waste a beautiful piece of meat by turning it into charcoal.

I remember not liking steak as a child because my mother would always order it well done for me.. It wasn't until I tried a filet mignon at my highschool cooking class that was prepared rare that my eyes were opened.
