eat what you want. if i'm cooking it on a charcoal grill, i burn it and put ketchup on it mmm. if i go somewhere that's not all that nice, then i'll order it well done but if i go somewhere fancy i'll order it medium.

That's funny, cuz I can certainly tell the difference between good cuts and meh cuts at all levels of cooked-ness.

One of my friends is a chef at a place that sells real kobe... costs $20 an ounce... Minimum 3 ounce order.

Yea it is from the Wagyu, but domestic "kobe" dont get the same massages/care/treatment that the Wagyu in Japan do.

What drove me nuts when I worked in a kitchen is having to cook a well done steak... in the middle of winter. Took like 15 minutes to cook on the grill, sometimes we'd just throw it in the microwave. :p

FWIW I prefer med-rare to medium. I have to agree that even a well cooked med-well or well done steak is pretty bland.

What on earth is so attractive about steak?!? I really can't stand steak (of any type, regardless of how well-done (or lack thereof)) it is, and yes I've tried varies amounts of done-ness. Give me some ground beef, any day.

Once you've become ill from eating under cooked meat your perspective changes. The sight of blood on my dinner plate makes my stomach turn. A good steak house understand what medium well means, it means meat that's cooked, not dripping blood but not charcoal either.

I don't understand the steak obsession either. I've tried supposedly good steaks and thought they were pretty bland.

Is medium-well cooked on the outside, a little pink in the middle, and no blood? That would be ok.

Otherwise, well done for me. But I think I've eaten maybe 8 or 9 steaks total in my 22 years. Not a fan of a thick slab of meat.
