I prefer Cholula in Mexican/Tex-Mex/Southwestern style cooking. Tamazula/Valentina are also very good.
But I prefer Tabasco on more southern things like eggs, fried chicken, jambalaya, etc.
I like Texas Pete on buffalo chicken cheesesteaks.
I'm not really interested in "hot." Flavor is my concern. Tabasco, Cholula, Tamazula aren't all that hot, but they taste great. I've never understood the fascination with things like Dave's and Blair's. "I'm sure this chili would taste great if I could taste it..."
