So you have a native transport from each state that settled in CA, and suddenly theirs is greater than the rest of the collective states? That makes no sense. A bunch of soulless folks in CA that have never tasted good food suddenly have the best of all regions? It's like that Taco Bell stunt back in Alaska last month - those idiots wouldn't know good Mexican food, yet they were shaking and crying and praising Jesus when Taco Bell dropped in a food truck.

I don't doubt your claim that those places are good - I bet they're pretty tasty, based on some of the Yelp reviews I just perused. But are they better than some of the places in each separate state? Hell no. I've only truly known Texas and Tennessee BBQ - there's places here that are legendary, known across the US, and bring in tourists. It's one thing to say Texas BBQ is full of win...from all Texas reviewers. It's another to say Texas BBQ is full of win...from a bunch of Californians.

Taco Bell analogy holds.

While I agree with you to a point, we get a lot of people from other states doing their bbq.

For instance, Bludso's does texas style. They (the proprietors) come from TX. TX expats go there.

Is it 9.5/10? Probably not, but they do the best Texas BBQ in SoCal and are probably better than a lot of Texas BBQ places in Texas.

Saying that we don't know good food is idiotic since CA has every single food style imaginable. We don't live in a bubble, so we can actually compare styles (NC vs TX vs Korean vs Brazilian vs Japanese)

Don't get me wrong though - there's a lot of terrible BBQ in SoCal.

I don't know of any country that considers bbq "low/slow/smoke" except for the US.

see, this I agree with.....but it's different from how I interpret the thread and poll question. Maybe I'm reading more into it than I should.

I interpret as what state style. not what actual state.

I still think it tastes the best though :p

Who the heck is voting North Carolina? Do you know what they refer to as BBQ around here? Its where the cook chews up flame cooked pork and spits it out on a bun with some vinegar and cole slaw (as part of the sandwich). I'm not kidding, the BBQ sauce here is vinegar with a couple of pepper flakes floating in it. The first time I ordered BBQ at a restaraunt here I was about to tell the waiter that they brought me the wrong dish until one of my companions pointed out "that's what we call BBQ around here." The best I've had was in Arizona, but I'd say it was probably Texas style.

You went to a pretty poor excuse for an NC bbq shack. There is a bit more to vinegar sauce than vinegar and pepper flakes. Not much, but some. There is also a difference between east and west NC when it comes to BBQ.

Was in NC for business and they took us out for their famous BBQ for lunch. It tasted like someone took some shredded pork and dipped it in vinegar....i couldn't even finish the sandwich.

The best BBQ is found on the side of some road to nowhere. The pit boss has been standing there a good part of the day, sometimes taking a swig of Dixie. Service with a smile is optional. The first bite makes the rest of the day A-OK.

Never had good barbecue in California, nor in the Carolinas. Texas and Kansas cook meat but my vote is a tossup between Georgia and Alabama. Pork butt preferably, brisket is good, too. With a mustard based sauce. Vinegar is for fish and chips. Tomato, well, vegetarians got to eat something too.

When I was at Fort Benning, heaven was Country's in Columbus, GA, the original one. I've run across a few others, most have passed. I regularly stop at Durham's Best Barbecue, just off I-95 at the Delaware/MD line for quality brisket and ribs, proving there are good places where you might least expect them if you only stop and smell the smoke.

One more thing, for a real pig feast, Puerto Rico's lechón asado is up there with the best of the mainland.

Born and raised in California, time spent in Texas, and currently living in NC.

NC gets my vote.
