I usually take Whey in the morning and midday.. either before lunch (I'll eat lunch later than usual). Or 2-3 hours after lunch. Take Casein before bed. On day's I'm lifting (I usually lift late into the day), I'll take my midday protein later, wait about an hour, then go into my workout. Then another shake after. To summarize, 3 shakes on nonlifting days, and 4 on lifting days.

Simple question: I'm working to build muscle and lose fat. I used to be 300 lbs, I am now ~255 lbs. All fat loss, substantial muscle gain at the same time. I hear the recommendation to have 1g of protein for every pound of weight, as an overweight person how much would you suggest?

I think the best method is to always keep a signficant amount of protein in your diet (approx 1-1.5 g per lb of bodyweight) and to reduce fat and carbs significantly if you want to cut. Never stop lifting :)

The recommendation is AT LEAST 1g of protein per pound of lean body mass (basically everything minus the fat). When losing fat, all the way up to 1.5g per pound is alright and may be beneficial, as long as you are still in a calorie deficit.

If you don't know your lean body mass, you can figure it out if you know your body fat percentage. If you don't even know that, just use your target weight as the LBM. Obviously it won't be your LBM, but nothing needs to be exact, all of it is just a ballpark figure anyway to make sure you're getting enough protein, and if you use your target weight and try to get at least that much protein, you're getting enough.

Oh, and make sure you're getting at least 0.5g of fat per pound of LBM. Fill the rest with carbs if you want, or more fats, or more protein. It doesn't really matter, as long as you are in a calorie deficit and meeting the fat and protein requirements. Besides that, do whatever makes you comfortable.
