When a 10" shallow pan just will not do...

Cooking snobs of AT,

I have always taken your suggestions to heart, and use them to assist me in my decision making.The knife thread proved a success, so I come to you once again, a humble cook in search of a new product.

My trusty Tfal set of cookware is serving me well, but I've found that the 10" frying pan cannot handle heavy loads. What am I looking for you ask? A nice, deep 12 or so inch sauce pan with glass lid. I like what Calphalon has out, within the $30-60 range, but I come to you, AT, for other possible suggestions.

I'd say for heavy loads I'd go with enamel cast iron dutch oven.

I did pick up his $15 knife set haha. People can talk all the shit they want, but they're sharp as hell and have talked anything i've thrown at them.

I've got a set of cookware from Tfal, so i'm just looking for a bigger pan now.

Whole set is $100 - set includes a 11" deep fry pan with a glass lid. Same set on HSN I think is over 2-bills.

I got a Caphalon set a few months ago. 1/2 off plus an additional 15% (I think) off because it was the display set. I like them.

Hey Aggie - check out Ross or Marshall's. There are a few in Austin. You can find all sorts of pots and pans there.

My fiancée and I found a Le Cruset dutch oven that retails at over $250 for $40. It was missing the knob on the lid, but a trip to Sur le Table fixed that problem for only $10.

I'm getting ready to upgrade to some nicer knives, my $50 12 piece set isn't cutting it anymore (har har, but seriously it isn't).

I have quite a few high-end specialty knives made by Knives of Alaska. Check them out.

For common knives, I prefer Wusthof or similar quality.

I go cast iron all the way now. Usually use a 14" or 12" pan. Great for camping and cooking with fire too.

I hate Calphalon products. Every calphalon pot or pan I've owned has had some sort of manufacturing defect or other ridiculous limitation. I bought their stainless 10" frying pan a while back and I couldn't cook eggs in it! No matter the oil/heat combination, a thin film of egg would anneal to the pan and require 30+ minutes of scrubbing to remove. Who the hell makes a frying pan that won't allow eggs to cook properly? Answer? Calphalon.

My suggestion? Go with an all-clad product, or a generic cast iron pan. You won't regret either decision.

How much did you pay for said pan? I fried chicken in mine last night and was able to clean it with just a paper towel and some warm water.

I don't recall how much I paid specifically, but it was their tri-ply 10" omelette pan. Here's a link.

If you're going to cook eggs on stainless or anything with a grain like that, you have to use a LOT of butter, possibly enough to float the egg. And keep everything moving. Which is what you shouldn't do when making an omelet.

I would never label that an omelet pan. That just brings back memories of when I tried to make eggs in hard anodized cookware. I have a calphalon 3qt saute that I like. I also have a 10" omelet pan, but it has a non-stick coating.

Question: Did you scrub it or just throw it out the window and curse a lot?

Eggs are a bitch in any pan that isn't non-stick, it's not specific to the calphalon.
