Whats your preferred cheese for a grilled cheese sandwich?

Monterrey Jack, Cheddar, Queso Quesadilla, and Asadero Cheese.

Shredded for better melting and smoothness.

Also, I butter the pan for each side of the bread.
 
American.

I hate "colby" cheese more that words can express. It's the most tasteless, bland excuse for cheese that was every concocted. It's like someone decided to make a cheese for people with no taste and no taste buds. Total garbage, but a perfect fit for the typical American palate.
 
I was once told that the secret to grilled cheese is to use two types of cheese. He recommended Peppadew Havarti and Extra Sharp Cheddar plus tomato. That's what I've done ever since.

sharp cheddar or american if I'm lazy or limited on selection in the fridge. I'll do a 3 cheese blend of american, cheddar, and colby. No tomato needed as I usually have it with tomato soup!
 
I was at a bar once and checked the menu and saw grilled cheese sandwich $5.99. I decided to get the sandwich. The waitress even commented that "You'll really going to like it." Heck, that could mean anything. The sandwich came and it had two types of cheese a yellow and orange colored cheese (sorry, I don't know my cheeses). It also had grilled onions and tomato slices on it, with just a schmear or Miracle Whip. Wow, it was really really great. Obviously, everyones taste is different, but to me, this was one of the best grilled cheese sandwiches I have ever had.

Second best is the Sonic Drive-In grilled Cheese and have them add tomato and onion. For a quick grilled cheese sandwich, it was darn good.
