For snacking: Gouda, smoked Gouda, Jarlsberg, sharp Cheddar, pepper jack

For cold sandwiches: Swiss, medium or sharp Cheddar, Colby.

For grilled sandwiches: Monterrey Jack, mild or medium Cheddar, Swiss.

Sharp has a much more intense, almost bitter taste and tends to be firmer and more crumbly.

I hate pepperjack

When I'm in line and the person in front of me gets a turkey sub with pepperjack cheese and mayo slopped all over it, I want to throw their crap sub on the floor. Worst possible combination. Well throw it on a wrap and it'll be.

Kind of a multi-way-tie:

- American Cheese is good for snacking, but only a few brands. Land'O'Lakes and some similar ones have a really weird recipe. It's not "sweet," but it's weird. Clearfield American Cheese, which I think is from Wegmans, is the good stuff. It's a bit saltier, and I simply like the taste.
- Mozzarella - good in a macaroni and cheese recipe I got from my mom. The whole works gets topped with stewed tomatoes. Also makes a decent snack.
- Sharp cheddar - goes into the macaroni and cheese recipe.
- Parmesan - pasta topping.
- Kraft's yellow "cheese" stuff - for homemade burgers.

Those are the best cheeses I eat, and incidentally, I think those are also the only ones.

Brie.

Although I've had some one-off stuff like a wasabi swiss cheese that was awesome.

I'm in Europe right now, so it jumps between Brie, Gruyere, and Cheddar. The town of Gruyere is right down the road though :p These are all just plain eating cheese, but sometimes it's nice to add some Gruyere to an Italian dish (gives a unique flavor, I like it) w/ some parmesan of course

While I'm in America, it's baby swiss for sandwiches, pepper jack or monterey jack for most other things. Queso Ranchero is really good for a lot of things
