I have really enjoyed:
12 year cheddar
Edam (not all is created equal)
Marscapone (because it is so verisitile)

depends for what...
for sweet/smoked hams, i find provolone or mozarella(esp with lots of tomato) to go well.
for turkey, i like cheddar

for burgers, just give me processed..

by itself... pepperjack

I like cheese too much to pick a favorite. I have never eaten a cheese I didn't like, not even Velveta.

feta cheese is great in salads.
cheese overall is one of my favorite foods.
mmmmmmmmmmmm...........melted cheese with a little burnt, so good.

I don't know if I'd go as far as to say I have any favorite but I do like a nice smoked Gouda and a blended Swiss/American cheese.

i feel like a cheese noob after reading some of this. i guess i like pepperjack for cheese-sake, and i like provolone when on a sandwich

EDIT: im so inspired by this thread and the fact that i have had like maybe 7 of these cheeses that im going on a cheese mission when i get back to school. i have a week off at school before class starts, im going a travelin'!

Seriously, Kraft Cheese, or any "American" processed cheese is simply disgusting on anything. A sandwich can be made infinitely better with decent cheese. You don't have to spend a lot of money to get quality.

oh, don't get me wrong. I LOVE cheese, and especially enjoy Muenster and provolone. But if you give me American on a burger, I will survive. But I'd never eat it plain on crackers.
