Can't pick a favorite. I like having cheese with some beers, although I do it a bit non-traditionally. I like swiss or baby swiss (real swiss, not that processed crap) with my barleywines, or sometimes sharp cheddar. I also like bleu and feta, and like 9 other ones.

But since I have to vote, I am going to go with Wisconsin Baby Swiss. Simple, but good.

ya, there is nothing like fresh curds, you buy them warm, never put them in the fridge
