Dammit guys, chedder is a dull cheese! You grate it on your pasta... Yeas, strong chedder is quite nice, but it's still pretty damned plain.
You need a Camembert with 50% or higher fat content on fresh french bread with some red wine.
MY favourite cheese has to be Roquefort or Gorgonzola. Cambozola is a less powerful variant, which is still gorgeous.
whoever said string cheese: Get out. That's not even cheese. The cheese in plastic that you put on a burger is not cheese either.
other fantastic cheeses include goat's cheese, ewe's milk cheese (creamy as) and decent bries. Fontine (italian) is delicious, too.
