Pig testicle. Stir fried with ginger. It comes in a huge platter, with 100+ of them on the plate.

Uni is probably right up there too... I thought it was fried fish roe from the picture. Turn out to be raw sea urchin... shudder... You know what, I think I am going with uni instead of pig's testicle, that tasted ok.

Maybe it's just because I've been eating them since I was little (parents went to China before I was born; brought back a lot of the culture and appreciation for "weird" Chinese food), but I don't really understand why people think these are so extreme. They are aged in much the same way cheese is aged. Funny thing is, most Chinese people don't like cheese because they see it as gross rotten milk, but they'll eat 100 year old eggs any day.

Me think it's has more to do with most Chinese being lactose intolerant. Plus cheese does has a strong smell and it is a strange smell to the Chinese.

An egg containing a fetal chicken. It was in China. They "hard boil" an egg with a half-formed chicken, and then you crack the shell, and eat the little chicken. Inside the chicken's abdomen is the "yolk," which tastes like normal egg; other than that it tastes like chicken. I almost threw up; it still grosses me out thinking about it.
