The ahi tuna tastes (and looks) almost exactly like pork. Like chops or steaks. It's flakier in texture, but otherwise, just about like pork.
The best recipe I have for banana bread is old and inelegant, but tastes wonderful. It's the one from the old plaid BHG 'New Cook Book' that I have that's probably 20 years old. I don't usually measure the bananas carefully (just throw two or three in the mixing bowl, depending on how big they are, without bothering to mash them up..the mixer handles it fine) and I never add nuts.

Banana (nut) Bread
1-3/4 cups flour
1-1/4 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
2/3 cup sugar
1/3 cup shortening
2 eggs
2 tbsp milk
1 cup mashed ripe banana
1/4 cup chopped nuts
Stir together dry ingredients (not including the sugar) and set aside. In mixer bowl, beat sugar and shortening with electric mixer until light, scraping sides of bowl often. Add eggs, milk. Alternate adding parts of dry ingredients and banana to creamed mixture, beating until smooth. Fold in nuts.
Turn into lightly greased loaf pan and bake at 350f for 60-65 mins until a wooden toothpick inserted in center comes out clean.

Ok, how I usually make it: beat together sugar and shortening, add milk, eggs, and bananas (usually just thrown in, sometimes I mash them with a fork a little.) Dump in dry ingredients and beat until smooth. Omit nuts. Bake as above.
