Well thanks everyone for the ideas. I tried the various blades and techniques with the jig saw and the thing I believe is just a PoS. It still wanted to cut to the left away from the guard I had setup.

So in the end I used a 1" flush router bit and it cut the hole without issue. I did end up with a mountain of saw dust though :D

Well crap! I misunderstood what the problem was. It probably wasn't blade flex, but alignment. The blade holder isn't aligned with the saw body. That's a very common problem with jig saws. My top of the line Bosch has the problem. You can't cut using a fence because the blade is a degree or two out of alignment with the saw fence. Free hand it will probably cut straight.
