Last night's dinner, I cooked two ribeye steaks & some fresh corn.

Tonight, I'm probably going to grill some hamburgers & have a fresh salad from the garden, and fresh corn.

I'll also be canning crushed tomatoes tonight (6 or 7 quarts - I can't remember how many fit in my canner.) Plus, while I'm at it, I'll get around to making the hot pepper jelly. And in another hour or so, I'm going to pick a bushel or so of apples & run them through the cider press for fresh cider (I'll have some with dinner.)

cornbread, currently in the oven inside a castiron skillet and making my kitchen smell great.

now I just gotta decide what to do with all the leftover cornmeal... maybe honey muffins this weekend.

Sloppy Joes (ground beef, mild Italian sausage, green onions, yellow onion, minced garlic, etc)


Baked:
Key Like Pie (Crust made with shredded coconut, ground ginger, graham cracker crumbs, butter, sugar; Filling had egg yolks, condensed milk, Key West Lime juice; Meringue topping made with egg whites, sugar, cream of tartar)--I think I overbeat the meringue 'cause it deflated during cool-down

Microwaved a plate of refried beans.

EDIT: My mom cooked the beans so that should count as "from scratch" imo. :colbert:

they also had some toast with jelly, but toast is not cooking really.

A home invented pasta dish with minced chicken, carrots, green olives, onions, cherry tomatoes, garlic, apple vinegar and rosemary. And lots of Parmesan.

Yesterday I made orzotto with some awesome mushrooms and grape tomatoes I got at a local farmers market. Also made chicken noodle soup and an apple pie. It was rainy outside so it was a good cooking day.


A home invented pasta dish with minced chicken, carrots, green olives, onions, cherry tomatoes, garlic, apple vinegar and rosemary. And lots of Parmesan.

That's actually a staple dish in the Mediterranean areas. If you want to get authentic try adding artichokes and some feta cheese to it :)

Probably tacos? There are only a few things I can/will make:
- Grilled Cheese
- Tacos
- Hamburger Helper
- Grilled Meat - though I prefer to have my wife do it because she's better at it
- Anything that just requires heating in the oven/on the stove/in the microwave

I'm pretty terrible at cooking, so I leave it to my wife.

I preparred and canned almost 20 pints of salsa over the weekend. Garden was overclocked on the tomato production. Onions, tomatoes and peppers for the salsa all came out of my back yard.

Yesterday I made pasta with fresh pesto sauce - basil, garlic, pine nuts, olive oil, salt and pepper, and also grilled a couple tuna steaks (lime juice, soy sauce, s&p) for my date. I think she was pretty impressed. :thumbsup::cool:
