I have the mats for chili at home and when I get off in a couple hours I was going to start it up for tonight. I'm kind of in the mood for some additions though. Something different. So far I have:

2 cans of black beans
1 can of red beans
1 can of pinto beans (I like fairly beany chili as you can see)
2 cans of diced tomatoes
1 can of rotel
2 pounds of ground beef
2 packets of mild chili seasoning

This is the recipe I've used for a while, but I'm starting to get "bored" with it. Any suggestions on additions or substitutions?

About a 1/4 cup of cayenne pepper and a couple of chopped up jalapenos would make it closer to chilli.

I am not quite so sure what you have been making, but I don't think it is chili.

Need at least a tablespoon of each; chili powder, cayenne, cumin. Float some jalapenos and/or serrano (I like anchos as well), also dice up some onions and garlic. And good God man, get rid of the beans.

Real chili has no beans!

Edit:
The ingredients to my last batch of chili:

2lbs ground beef
1 medium sweet onion
1 cup beef broth
5 cloves garlic
2 28oz cans of diced tomatoes, drained
3 ancho chlis floated
2 bay leaves
2 TBS cumin
1 TBS salt
1 TBS Chili powder
1 tsp (1 cube) beef bouillon
2 jalapenos floated (don't dice up, just throw in there)
3 serranos, diced and seeded

simmer for 45 minutes, then add:
1/2 tsp onion powder
1/2 tsp garlic powder
1 tbs cayenne
1 stick of cinnamon
bottle of beer (either go for dark or a hoppy one)
1 packet of Goya sazon
simmer for an addition 2.5 hours (depending on taste)

It is a bit on the spicy side (but not an overkill as you may think), so adjust as necessary.

My chili base starts with 6 cans of beans

The last time I did chili I tried 1 lb of ground pork and 1 lb of ground beef and it came out pretty good. Try dicing up fresh onions and tomatoes instead of rotel.
I usually add a heap of garlic cloves, a bay leaf(I put mine in a tea ball so I dont end up with a bay leaf stuck in my throat later on), red/green bell peppers, jalepenos, a poblano pepper. I went to a mexican neighborhood last time and got this great little orange pepper, I have no idea what it was called but it added a good amount of kick.

Play around with the spices yourself instead of using a seasoning packet. Raid your spice cabinet. Throw cayenne, black pepper, garlic goes in 99% of every food dish you make excluding deserts, I like to toss some dill seasoning in my chili for the hell of it.

Its been mentioned, but get real chili powder.. not that chili seasoning crap..

Also, instead of using plain diced tomatoes, get the diced tomatoes that have chili peppers, onion & garlic in it. Should be in the same area of the grocery store.

Lotta good ideas so far, but I'd suggest that with all the Hot Peppers, add some Sweet Bell Pepper(yellow, red, or orange) and thinly sliced Carrot as well. Both add some sweetness. Corn is also a good addition to chilli.

Sounds like someone plays too much WoW. :p

I agreed with MikeyIs4Dcats. Way to much beans and not enough meat.
