Looks really close to the YT vid you posted so I'd say you are on the right track. I will say the YT video you linked to was in Chinese with no CC so it was hard to follow along. Dong Po Rou is what the translator came up with and it looks close so I'll go with that.Hopefully I burnt off all the hair including the root. Now wait til it cools and I can scrape it with a knife.

Remembered the kids didn't like it the last time I tried so did the Taiwanese braised pork belly instead. With meatballs, fish balls, pork ribs, kelp knots and egg. Bro, that looks really good.This came out quite good. The chicken and taters just needed some salt, should have seasoned the marinade a bit more. The tabbouleh is so good. I love all the roasted onions and garlic in the bake though. So tasty.
