It's 11pm at night and I'm making a vegan lentil stew I adapted from a Jose Andres recipe - his mom's lentil stew. Family is coming over tomorrow so I'm making the soup now since it always tastes better after a day in the fridge so the flavors can fuck and feel good.

My niece is vegetarian so I used mushroom and veggie stock instead of chicken. The original recipe calls for water, but I like using boxed stock. It's an interesting recipe as you cook a split onion and a few cored tomatoes part of the time in the soup, as in the picture. You take the onions and tomatoes out and let them rest. When cooled you peel the tomatoes and blend them with the cooked onions to create a puree. This is added back in at the end to thicken the soup. I love it. I add a few shallots in there for fun.

While the original recipe just calls for paprika, I add some coriander and a touch of cumin as well. Also I add in a couple bay leaves. I always add in extra garlic, potatoes, and carrots. Mostly everything is organic. It's delicious, super easy to make and not pricey either. Got a loaf of french bread and some good greek EVOO for tomorrow's meal.

I made another Pork Cottage Roll tonight in my crock pot. I added cabbage, carrots, celery and onions along with a sprinkling of fresh dill.

Cooked for around 7 hours, the 4 lb roast had an internal temp of 180F.

For those who aren't sure what a cottage roll is: a boneless pork shoulder that has been cured (sweet pickled). Tastes like a ham.

Fresh from the pot with netting still on (I removed the netting a few mins later)

Made garlic pepper wings yesterday baked in oven. Today it's penne with meat sauce and meatballs

Pork Cottage Roll
I've never had it, but it sounds good. Color is a little off putting. I'd of slapped it in a hot cast iron skillet for a minute or so a side. The slice that is.

Is parsley sauce a thing in the US? That would be great with parsley sauce and boiled potatoes!

You could give me a $25k camera and I'd make it look like a 1980 disposable took it.

That stir fry is my favorite kind of eating, light and healthy. Though for some reason all seed oils are bad for you now. I still haven't gotten a straight answer on why. So peanut oil which takes high heat well is bad? Cold pressed avocado oil is bad? Grape seed oil is bad? I had no idea.

I'm not giving up my toasted sesame oil in my stir fry!

Honestly I think people over think what's good and bad for you. Eat a healthy mix of vegetables, carbohydrates and proteins. Try to avoid too much processed food too often. But honestly we are designed to eat whatever we come across and we all gotta die sometime! Just pay attention to what your body tells you!

Can't do that. I'd be divorced, weigh 1 metric ton, and be wearing a court ordered cankle bracelet. 😈 Seriously though, I agree. Seems like everyone saying to stay away from seed oil are selling something.

I made grass fed beef BBQ meatloaf with garlic mashed potatoes and braised cabbage with carrots and onions last night. Wife and son destroyed it.

in the US it is sometimes called Cottage Ham (especially if smoked).

Cottage roll is a very Canadian cut of pork and can be a bit fatty due to the shoulder being a fatty cut. Tastes like mild ham.

It can be cooked in an Instant Pot (30 min per pound) or boiled (simmered) with veggies.

I kinda meant that it'll tell you if you are eating "wrong" then you'll put on weight or lose weight or get scrurvy or something!

Theres a billion food advisers all funded from different aspects of the food industry. "WINE IS HEALTHY! DRINK MORE!", "CHEESE IS HEALTY FAT!"

Just do the all (well most tbh) things in moderation is my go to.

I always have some toasted sesame oil on hand. I used to cook with it but now I kind of use it more as a finishing drizzle when my stir fry is about done, it parts a great flavor and aroma to the stir fry that way. I usually use avocado oil now to stir fry. How do you use it?
