For some reason this post made me realize how drastic a change this has been for travel for us. Since 2014 we've visited at least 5 countries and 2 states each year. Last few years have been 8+ countries. 2020 will almost certainly just be the one country from January :disappointed:

I'll try and look on the positive side and maybe finally get to the upper peninsula in MI. Either way this will be the most banked vacation time I've had since 2013
I'm not counting on vaccine for covid-19. I doubt I will travel international this year or even next year because of this virus. I'm thinking about buying a RV so I can go camping across the US for the next 2 years or so. I don't want to stay in hotels, and I want to be able to cook my own food.

I woke up to delicious smell of fresh baked bread and butter. Wife had baked sweet cornbread. But instead of using 1:1 ratio of flour to cornbread, she used like 77% flour and 23% fine cornmeal. Result was sweet tasting bread that was lot softer and less dense than regular cornbread with light taste of sweet corn. Insanely good.

Grilled bologna sandwiches with cheese, lettuce, onion, pickles and mustard on some fresh (not homemade) cheese buns.

I just got a smoker last week so were doing some of that. I read about the pork shortage so I went and bought 3 butts and 4 racks of ribs so I have food to smoke.

I have been buying canned beans (too lazy to cook them) and making a simple bean salad. Basically, I take (4) cans of beans (different varieties), rinse and drain them. Then I take some vinaigrette dressing (I try to use the no oil variety) mixed with some yellow mustard, pour that over the beans as dressing and add a little salt to taste. Let sit in the frig about an hour before eating.

Recently, I have been adding chopped onion and jalapeño peppers to spice it up a bit. I try to keep some in my frig regularly. It makes a great snack/meal and is relatively healthy.

just made cous cous because it's f* easy.
1. buy the right kind of spice - it's one thing in one packet.
2. put in pot lamb, carrot, celery, onion, cut in big chunks.
3. stew slowly for 1 - 2 hours.

4. put cous cous in a pan. add a bit of salt.
5. heat pan, pour boiling water on cous cous to cover. cover pan with lid.
6. come back in 3 minutes and fluff the cous cous. Add maybe some butter.

done.

I ate a entire 27oz pepperoni Digiorno in one go for lunch yesterday, then about 3pm i had 65mg thc off half a Hubby bar as i ate the other half the day before. Then a 8pm snack was a bag of popcorn. Was good eating for sure :) Drank nothing but water, kept hydrated as it helps with the thc REALLY kicking in. Very important to stay hydrated.

I had a major failure. I got that smoker last week and did some ribs. They turned out good but I wanted a bit more " pull". I did a pork butt and it turned out okay. Then I had a package of ribs whose bag had lost its seal in the freezer... They had only been in the freezer for 2 days so I went ahead and found a different recipe for ribs and threw them on the traeger.

Major fail. Rubbery and dry. They were god damn horrible.

lunch today: cherry wood smoked rib tips. I love rib tips. One of my favorite cuts of pork.

A while ago we were grocery shopping in Estonia. At the checkout the cashier thought a bag left on the conveyor was ours. We tried to tell her it wasn't. She kept saying "You take. You take."

Well we finally made pizza with the bag she insisted we take and homemade sauce

Grocery shopping has been fun. Screw the list. Every time the news reports another meat packing plant closing down, it's like being on Food Network's Chopped.

I have been doing Blue Apron because my mom got me a gift card for X-mas. When the gift card was spent, I cancelled, but then when groceries started getting weird, I started it back up again. It's about $72 for enough food for 8 servings (4 servings each of 2 recipes), so it's not too bad. Everything is really fresh and after I do the recipes once, I go back and use different cooking techniques for future dishes using food I buy myself. It's pretty cool, but when this is all over, I'll probably cancel again and just use all of the recipes I've amassed.

Taco Tuesday baby!! Okay, okay, it's Thursday, but every day feels the same now and it still starts with a "T", so close enough. Also got a giant batch of onions cooking slowly, by this evening they'll be nicely caramelized and tomorrow they'll be about 2 gallons of onion soup. Everybody in my family loves onion soup, so I make big pots and give out a lot of it.

Just placed 1/2 lb beef patties on the grill. 15 minutes with the lid closed and vents fully opened. No need to peek or flip. Just set the timer for 15 minutes and go inside and enjoy a beer til it finishes cooking. Easiest way to cook a burger.
