No, Stilton is a very strong blue cheese from England. It is often referred to as the "King of Cheeses". Best enjoyed after a fancy meal with some vintage port and a cigar while the women leave the room (traditionally speaking, of course...)
 
I used to work in a gourmet deli 🙂 I've cut a lot of cheese.

I like Danish Blue in a salad

10 mo. aged Provolone for crackers

Hot pepper Havarti on sandwiches.

Other cheeses I'm a fan of that make it onto cheese plates for parties are:

Shannon
Vermont Cheddar
Brie and Camembert
Roquefort
Gorgonzola
The ubiquitous Muenster 😉
and the occasional port wine cheeseball 😀

I bet you really like swiss. There can be some really strong swisses.

I love big-eye swiss. I eat it mostly on sandwiches, but there is some great Irish swiss out there as well. The stronger the better. Kerrygold makes fantastic cheese if you can get your hands on some.

I like just about any goat cheese as well. I sometimes get a goat gouda that's great. Chevrie is a really good goat cheese, but the fat content makes it almost too soft for anything other than spreading.
 
Port Salut

I don't eat any cheese with mold on/in it. Not because I find it disgusting I just don't like the taste unfortunately.
 
Depends waht to use it for...

Chicken Sandwich with Bacon = SWISS
Turkey/Ham sandwich from the deli = Colby/Jack
Cheese & Crackers = Sharp Cheddar
 
I love a good Shaep Chedder
Colby is excellent as well
blue cheese and stilton are amazing
Feta is great but its in a diff catagory IMO
 
Methinks a lot of you need to diversify your palate a little 🙂 There's a lot of talk of pretty blah run-of-the-mill cheese, so it might be worth your while to find a specialty store that has a diverse selection. Good cheese doesn't require a lot of nonsense mixed in (i.e. pepper, jalapeno, etc.); yes, they're good, but they completely denigrate the flavor of the cheese.
