What food is actually better stale than fresh?

Apparently I distinctly remember one ofmy gradeschool teachers going on about day-old spaghetti - she loves how the noodles soaked up the sauce.
 
A lot of foods are better the 2nd time around (leftovers) - lasagna is one of my favorites. But, I'd hardly call that "stale"

Are the malt balls that are soft instead of crunchy inside stale? If so, those are the best!
 
arroz verde, especially when you double boil it. frites dont come out right unless you use ancient potatoes and then let them sit around for a whole day before the second fry. biga for bread is best when you give it a 72 hour cold ferment. wine needs time. man, the list goes on and on. but by stale[/] you definitely have to go with captain's or veggie booty. hell, any of that company's snacks are better two days old.
