I've been to State Fairs in half a dozen states, several county fairs, the Spokane Interstate Fair, 8 rodeos, 3 goat ropings, and a donkey show...and I ain't never seen nuthin like this...
With only a few regional differences, every one of them has been the same. Pigs over here, cows over there, goats over yonder, and sheep back there. IMO, you can only see so many of any of them before they all start to look the same. I do enjoy the pie judging contests and some of the other "kitchen craft" judging...Those women are COMPETITIVE about their foodstuffs.
Every few years, we'll go to the county fair and watch the truck/tractor pulls, maybe a concert...(not Marshall Tucker ever again!)

or some other event. Here, the big event and the one most difficult to get tickets for, is the demolition derby. I've known several of the guys who do that one...WAHOO!
We have one BBQ stand that hits here every year. It's all the guy does during the summer/fair months...travel and serve BBQ. mmm-mm-mmm-mmmm! It's shore nuff good.
