I am shocked that you didn't include an option for HP Sauce.

Anyhow, really good ones? A little salt and some malt vinegar, particularly with fish.

So-so ones, especially from fast food? Maybe some ketchup.

With eggs? HP Sauce.

I rarely add salt to fries, they are usually salty enough.

Depends on the fries on the other stuff. Fast food fries, always ketchup. If I'm eating big steak fries, I usually use Ranch dressing. If I'm at Chick-fil-a I use their honey roasted bbq sauce.

fries with cheese and gravy or cheese and chili are a meal unto themselves.

if I'm eating fries as a side-dish, just ketchup.

I love chili cheese fry's. they are great but not something you can eat much. I make home made ones about 3-4 times a year.

Ketchup and salt generally. Sometimes I also add malt vinegar.

When I eat them it would be mayo/aioli, or just some salt and malt vinegar. Occasionally gravy.

I like nearly every type of fried or baked potato. Home fries, hash browns, latkes, croquettes, etc.

Love potatoes. Boil 'em, mash 'em, stick 'em in a stew.

hard to disagree with that.

potatoes are second only to tomatoes in "things that prove God's existence."

Lots of salt and just a little bit of pepper. The odd time ketchup, but salt is good enough most times.

can't believe no one has brought up Thousand Island dressing, or similar condiments like Russian dressing or 'fry sauce'

Buttermilk ranch dressing is unhealthy but incredibly tasty with french fries. Does melting cheese on top count too? Cheese fries are also ridiculously unhealthy but equally as tasty.

Indeed. I haven't had cheese fries in a long time. There was a restaurant outside my middle school that served them (we were allowed to go out for lunch). Good stuff.

I understand that restaurants have seriously unhealthy dressing (often tasting as bad as it is), but how are cheese fries any more unhealthy than plain fries?

Because they're plain fries with cheese melted on them. How don't you get that?
