I've heard of black beans, but not black bean sauce. I looked up and found a recipe for it, but can you buy it? According to the ingredients, it doesn't look hot. Is it?

err, if you never had it, you might not like it... You can find it in Chinese grocery stores.

ahhh Okay. I've never had miso, either. Is that also an acquired taste?

Both are fermented products, which means they are definitely acquired taste. Though there is
light miso (the lighter colour ones) and in soup it is greatly diluted.

I loved both the first time I ever had them. Chicken in black bean sauce is one of my favorite Chinese takeout dishes, along with eggplant in garlic sauce. Tofu is good in the garlic sauce too, hell everything is good in garlic sauce!

It's not hot. Wholefoods may have it. I know the one next to me does.

I didn't say anything about it being spicy, it is definitely an acquired taste though.

Mmmm Edamame. That recipe sounds good.

tofu has a distinct taste and smell. maybe you are doing it wrong.

Umm tofu has almost no smell or taste at all. Maybe you're the one doing it wrong.

imo one of the biggest keys to good tofu is the texture. The best is easily, 1000% the silken type. Next is soft which is acceptable. Any others sucks unless for very specialized usage.

My mom makes the best tofu. Pan fried then heavily sauced on top with soy sauce/rice vinegar/green onion (cut quite finely) mixture. Amazing with fresh white rice. She cuts them into approx: 1.5" long, 1" wide, 1/2" deep slices.

Tofu isn't so much of an enhancer but a great recipient of enhancements from other flavors. I just think you haven't had it cooked right. Try some hot soon dubu soup from a good korean restaurant.

Your smell/taste receptors are toast if you can't figure out the smell and taste of tofu. I guess you are a smoker?

No I don't smoke and yes tofu natually has practically no taste and smell. Do I really need to link to it? It doesn't enhance anything so I see no reason to add it to anything.

Like I said, it has texture, smell and taste, you are just not receiving the info. Everything (even stuff you should not put in your mouth) has texture, smell and taste, you might not like them, but the properties are there.

Didn't read the thread, so this probably contains duplicate info.

Tofu is a great low fat source of protein and fairly neutral absorber of flavors.

You can simply saute and eat slabs or crumbled bits covered in tamari (soy sauce) like eggs.

You can substitute it for Ricotta cheese together with nutritional yeast in veggie unto vegan lasagna.

It goes in most any stir fry.

Marinate it first in the savory sauce of your choice.

One dish I make from time to time has tofu, onions, garlic and bell peppers heavily curried and with copious amounts of nutritional yeast together with raisins and coconut over basmati rice.

It's sorta like super concentrated tamari (soy sauce) in taste. But there is a whole range of miso, from light to dark, with corresponding differences in taste intensity.

lol, the word miso did not appear anywhere in your quoted text. Threw me off. We were talking about black bean sauce.

One of the easiest way to do tofu is to pan fry (med heat) with a little oil first to crisp the 2 sides first, then add scallion, soy sauce and sugar to caramelise. Remember, always buy the fresh tofu still in a tub of water if you want tofu. There are derivative products that are really firm but they are not called tofu at that point. I am not even sure it has an English name.

I also eat it in hot pot, so basically boil it a little to warm it up and eat with Taiwanese BBQ sauce.

Or in a soup. Add tofu just before you add the scallions, do not over cook it.

One Japanese way is to serve a whole square of tofu with a little sweet soy sauce (add some sugar to soy sauce), scallions chopped fine and bonito shavings.

Why do some people equate tofu with anti-meat? It's just another food. It's silly to put a philosophy on it.

I was wondering that as well. (Looking at the post after yours...I'm a "white people". haha)

Thanks for more ideas, guys. I appreciate them. I went and stocked up. I'm going to try it in different things. I bought some yellow pepper, orange pepper and some onions that I'm gonna dice pretty small since I don't like big chunks of anything, but I'll try something like a stir-fry.

Sitr frying tofu will be a challenge. Even cut into little pieces it will fall apart. I can't think of any dishes that stir fries tofu. Braised, sure.
