All the DD's I've had here (granted its south FL - home of NY wannabe's and rust belt transplants come second) - have a thin thin layer of dough after the cheese, then the sauce is on top of that. However I've also seen it on TV with no top dough layer.

That is called "Stuffed", not "Deep Dish".

At least in Chicago, which is pretty much the authority when it comes to such things.
