Their breakfast is as good as anyone's. Last time I checked, Waffles were just as much a Belgian thing.
And salads at McDonalds are just as much as an Italian, French, English, Spanish, Greek, Russian, etc. thing - yet McDonalds is American.

Last I checked, few people expect fine dining at 3AM. It's supposed to replace heart-attack home cooking, not fine dining, and it EXCELS at that.
It's every bit as good as the same meal cooked at home too. It's bad for you in the same way a homemade breakfast with the same ingredients would be. Scrambled eggs with cheese and bacon or buttery waffle with sugary syrup is just as bad for you from a 5-star chef. McDonald's is giving you an approximation of their idea of a Greek Salad. This isn't WH's approximation of a good breakfast that can be had elsewhere: It's the SAME THING done almost as good as anyone could do it. It's not a fake.
Any dish an American dining establishment touches, it turns it into shit. Another example; Olive Garden. Even American dishes aren't safe from the conglomerate like approach to dining in this country - Apple Bees, TGIF, Brother Jimmys.
And, the point of going out, is to avoid the home cooked meal, because you want something better - from a quality perspective, in both health, taste and even presentation.
You are correct in labeling Waffle House as something that is pretty far from fine dining - but, it is still submerged in raw sewage... like most American dining establishments. And, it takes something pretty basic and still manages to make you feel like you ate donkey vomit.

Minor details.
I get what you're saying, but WH is not one of those kinds of places. They cook it right in front of you the same as your grandmother would do if she was making the same thing. They pull the eggs out of egg cartons, pour the milk out of milk jugs, and make the toast from the same single-loaf bag of Sunbeam sliced bread normal people buy at the grocery (not Whole Foods). It's soulful junk food, but it isn't assembly line food institutionalized.
As far as it being Americanized, I'm not a grits person so I'm sure I could get the same breakfast at almost any 24-hour roadside diner in Canada or the UK. Well, UK might be less inclined to use processed cheese.
For me, the point of going out is to avoid the effort, mess, and time it takes to cook at home. If you live with people they probably would not appreciate you making a full stove-cooked breakfast at 3AM just because you were hungry and up/out late. Also, like any other 24H diner, WH caters to travelers, which is why they are even open 24H on Christmas and Thanksgiving. Very few truckers are going to make a home-cooked meal on their cab when they aren't in the mood for fine dining.![]()
