I went with my gf this year and we both had a blast. Whether or not you'll have fun depends on completely on your gf. I love to drink, gamble and do stuff without any plans. My gf is the same way so there were none of those awkward "Let's do something I wanna do" moments.
 
Wicked Spoon at Cosmopolitan of Las Vegas rivals the buffets at Bellagio and Wynn. Those are the three best buffets on the Vegas strip.

KA is good, Love and O are better. But it looks like you've already decided on shows. I will say Terry Fator has a surprisingly outstanding show. Its up there with Love and O, and thats saying something when I've seen most of the shows.

Shark Reef and Bodies aren't worth the money. Unless they cut you a really good deal for staying at Mandalay Bay.
