Ok so I am just going to fry the stuff.
Olive oil will work ok right?

So should I just.... Dip the chicken in egg mixture (the whites) and then dip in flour? and then fry the crap out of it?

Wouldn't it be oven roasted if you put in the oven, not fried?

<Edit> I supposed you could shake n bake, but it still won't be fried.

Agreed. and this I am willing to sacrifice, but I know when you make chicken parm you bake it. And I was wondering if I did that if it would come out the same way...

LOL! :D

Nope, that isn't part of the deal... I do like it when she cooks, but... the kitchen is not her home, which is ok with me...

Here's how we've done it before:

1) Get some chicken breasts and cut them into small strips.
2) Soak the chicken in an egg wash (two whites beaten in a bowl)
3) Buy some Corn Flakes crumbs and season them with a little salt an pepper.
4) Take the chicken out of the egg wash and roll the pieces in the bread crumbs.
5) Put the pieces on a baking dish and bake for about 20 minutes at 325 degrees.

You will then have "healthy" and good tasting chicken.

If you bake it, it'll still turn out okay, you just need to make some sort of crust, like bread crumbs or something. You've heard of Shake and Bake?

Ensure that you season the flour with some salt and pepper to give it a little taste. I don't think you should be using olive oil, though. How about vegetable oil or peanut oil? Olive oil works better when you want to sauté meat or vegetables.

Olive oil would be a bad idea, it has a very low smoke point(the temperature at which it begins to smoke, and also taste bad). Using something like vegetable or peanut oil would be much better.

But as far as the procedure for .. battering the ckicken.

Just dip in egg mixture and then flour then fry?

Or should I double dip it?

Ok, I think I have seen enough mayhem. Go to FoodTV

Do a search on both fried and oven fried chicken. That should answer your questions.

Korean and Japanese stores should sell some fried chicken batter mix. Those work well for chicken drumsticks. Simply cover the chicken with the mix (which is powder, not mixed with any liquid, btw) and let it sit for about 1/2 hour. Heat up some oil but not too much under medium heat. Fry until cooked.

You could also try chicken cutlets.

1) Get some chicken breasts or chicken thighs. (I personally prefer thighs over breasts.)
2) Cover them in corn starch.
3) Dip them in egg (beaten).
4) Cover them in bread crumb.
5) Fry and enjoy.
6) Serve with some Korean or Japanese tonkatsu sauce.
