Turkey or no turkey for Thanksgiving?

I never had bison tail but would love to try it. I wonder if it has less fat than ox tail. Ox tail has quite bit of soft fat. $10 /lb is pretty expensive but bison tail isn't something you can find in normal supermarket. Costco Business Center has ox tails in 5 pound packages for $5.29 /lb. I'm going to pick some up tomorrow after work along with beef cheeks.

I have no frame of reference, but I'll definitely report back on dinner. My mother's balking at the tail, so she said she was gonna get a small piece of meat for herself as backup :^D
 
Turkey is good. But turkey overload non-stop for a week (and probably more depending on leftover load) just to be followed up with a similar week around Christmas, is not good. That is why I advocate mixing it up a bit let Thanksgiving day be unique. You can still force down turkey everything else from Nov ~20 to Nov ~30 and Dec ~20 to Dec ~30 as everyone else in the country will be trying to offload huge piles of leftover turkey.

You do need to eat your steak within a week. But those who know what they are doing (and that are willing to cut away massive quantities of spoiled bits) can age them far longer.

Nope bring it on, I'll eat turkey multiples times a week. I know how to use the freezer, its like deer season but shorter, fill the freezer and eat it for a year.
 
Mashed potatoes:
-Yukon Gold
-Some sour cream
-Asiago or manchego cheese
-Green onions
-Bacon bits
-Tony Cachere's seasoning
But why? Nothing matches the glory of a proper crispy on the outside, soft and fluffy on the inside roast potato covered with good meat gravy!
 
So a bit like potato croquettes?
Tater tots are to potatoes as chicken nuggets are to chickens. They're finely chopped and shaped into little cylinders shaped kind of like marshmallows. They're really popular with kids, but I've been seeing them more and more in "adult" settings like our office cafeteria. Done properly they can be pretty good.
 
Tater tots are great. It's like fried hash browns. Everyone loves hash brown. Give me some smoked brisket sandwich with tater tots. Yum.

I have decided to skip the turkey. I'm going to cook the 10 lb wet aged beef top loin as the main. I'll smoke some chicken wings as appetizer. That will be only poultry.
 
no giant turkey, but compromised by buying 6x turkey legs which I will smoke. We're going to roast some chicken leg quarters and will also have a ham.
