Well first off, wine and champangne are very different tasting to begin with.
Now only speaking of wines, even whites will all taste different. Serving certain wines at the wrong temperatures also make them taste poorly....certain food/wine combos are terrible together, etc.
In general, cheap wines are less than $5 per bottle and the upper are over $10 per bottle....with premiums in the $20+ bracket, in the upper range you have a wide range in price. Certain types of wines are more expense also....depending on the grape used.
Most premium alcoholic beverages will have a better and smoother taste...lesser quality drinks taste more like alcohol than the flavors used to make them....as the ingredients improve and/or more aging is allowed (only some types should be aged at all, and aging length of time depends on a lot of things too) better flavor results.
