Err you need to add more support for that seat. Most of the weight is going to the front.
I have some in the front you can’t see. Conveniently that is nearly touching the tile
Edit: I am going to support that side more too, I havent had time to get more shims.

I think the best you're going to do is tap the shims in a bit and just run a thick bead of caulk. It's certainly better than the alternative!

Use sanded grout instead of caulking, it will fill the gap and support the entire toilet. Be sure your shims are in far enough to allow the grout to cover them. If I had to guess, I'd say the color is "summer wheat".
