I know I say a little prayer of thanks to the French every time I pull out my hand hammered carbon steel wok and fry up some rice (with extra MSG!).

These are fucking great BTW. Everyone should have one if they have a gas hob.
Just make sure to season it and not to forget to oil it.

Always wanted to get a kitchen with a burner as strong as one can get to a wok burner. Really gotta get that wok hei going.

I doubt that my hottest ring gets to half what a good wok burner gets to tbh! Those things get so hot that I'd be worried about using one indoors in a domestic kitchen!

My power burner is respectable for an indoor non-commercial burner but eventually I'm going to get an outdoor propane jet burner.
