You take your gloves off before shaking someone's hand, and you take your hat off.
It is almost as subtle as body language demonstrating the you have nothing to hide, and you are being open. Sort of like
teenage kids wearing sunglases indoor. They think they are being cool, everyone else knows they are just insecure and trying to look cool.
