I sit on the fence on this issue so that I may partake in the pleasure of enjoying THEM ALL!

PS What would something like cinnamon roll fall under? Bread?

:hmm: I'd say it's closest to bread. cinnamon roll and cinnamon bun aren't exactly the same--a roll actually rises, so that's pretty much bread, right?

a cinnamon bun should remain within some desert limbo, where all delightful, yet unclassified confections wait for further examination.

I don't know it's tough to classify because cake may or may not have leavening agents such as yeast and so does bread. There are flat breads without leavening agents.

But I did find on Wikipedia that they say the cinnamon roll is a pastry and that a "Pastry is distinguished from bread by having a higher fat content"

whatever though, it's damn Good Eats!
