I think I'll probably make cheese and onion quesadillas, with pickled beets as dessert. Did you know you can just add vinegar to canned beets to make them pickled after a sort? Sounds obvious, but I never considered it. They add sugar to pre-packed pickled beets, and it's way too sweet. I like them with vinegar only, but it's good with cloves too.
 
Just finished a vegan bowl with brown rice and a bunch of different veggies. Was actually pretty good.
