They're similar to my
Souper Cubes, where they're made out of silicone & have a wire frame for stability. They hold 250g pizza dough balls or 500ml of ingredients (sauce, cheese, toppings) with a 4.5" diameter. I used to just use clear plastic deli containers, but these are more compact & easier to clean, plus they stack, so they're a lot more space-efficient in my fridge! Easy to grease & freeze as needed. Amazon had the best deal available, a 5-pack for $50. Pricey, but at $10/ea for reusable, dishwasher-safe containers that will last for many years & that do the job perfectly with air-tight lids & with sufficient room to allow the dough balls to proof, I figured it was a pretty good investment:
My typical workflow now is:
Baking Steel: This is thick metal plate that you "charge up" for 45 minutes in your oven or grill to bake pizza on.
SuperPeel: Basically a Teflon-style conveyor purpose-built to load dough perfectly every single time.
4" pizza cutter: I've experimented with a lot of cutting systems over the years & this has been my favorite!
Kevjes proofing containers: Currently using these for dough balls & ingredients.
Cheese shredder: I have both a Presto Salad Shooter (throwback!) & a
cheese-grating attachment for my KitchenAid stand mixer.
Indoors, I have a bottom-of-the-barrel non-convection oven that is capable of doing 550F. Outdoors, I use a custom-built 1,000F grill (charcoal/wood/gas/coal) along with a Baking Steel. They also have a variety of really neat pizza ovens now (Ooni, Roccbox, Solo, Qubestove, etc.). I used to work at a pizza shop back in high school & college, where I developed a love for making dough & making pizzas. I'm also a big fan of convenience, as I've learned that I'm about a thousand times more likely to do something when it's
easy, and I feel like these dough-proofing containers are sort of the missing link for "ultra convenience" in my home pizza-making adventures!
