Just wondering but how much of is the Irish diet is consumed in potatoes?I have irish blood so anything with potato is delicious.
Not a big fan of baked potato, but "healthy" would be using less fat. If you like butter, I'd use butter. I'm not sure a switch to olive oil would make it "healthier" if you're using the same quantity. Black pepper is all a tater really needs. For fried varieties, I like Tabasco.What are the best and healthy toppings for micowaved and baked potatoes? I pretty much use butter, salt, black pepper, and garlic powder. I'm thinking of trying Olive oil or soy sauce. Sesame oil maybe?

I'm eating it right now and it's really freaking good! I left out the bacon but I'll probably use it next time. This could become a winter staple for me. Thanks for the recipe.
