I like them pretty much every which way:

Home fries (w/ onions, peppers optional)
In stews (just ate a beef stew w/ all kinds of stuff in it!)
Mashed
Hash browns
French fries
Even chips, although I don't buy them, not healthy enough

As veges go, potatoes are not high on the health scale, probably not enough fiber for the starch content.

It's said you should eat only organic potatoes, BTW.
They offer enough fiber if you eat them with their jackets on.

They have a decent amount of vitamin C. You might be surprised if you compare nutrition with other vegetables. They are high carb. You have to move your ass if you eat a lot of them.

Baking/Microwaving are the best cooking methods for potatoes.

I don't know, man... cheesy tots are pretty damn tasty.

That said, Waffle House hash browns are probably the ultimate potato creation.

Potato bread is exactly like carrot cake. A poor substitute for the same thing made with superior ingredients.

Went to Doctor yesterday. Cholesterol was high. Said I should eat less meat, potatoes, rice and of course all things sugar or salt. To hell with all that. I am going out on the horse I rode in on.

You can still eat meat, potatoes, and brown rice in moderation. Of course you will have to quit the sugar and reduce the salt.

...while I would submit that it seems rather unfair that OP gets the big red bar by virtue of only 2 reactions total, he did earn it.

I agree. Potatoes are awesome. Is there even another food crop that is as wholly nutritious as a potato?
Potatoes actually provide small amounts of complete protein. Off hand I think carrots can product lots of food per acre as well.

Funny that you are saying when these very crops are already stables in many countries including those in the West. Very few people actually eat a 100% animal diet.

  1. In a large bowl, beat together eggs, flour, baking powder, salt, and pepper. Mix in potatoes and onion.
  2. Heat oil in a large skillet over medium heat. In batches, drop heaping tablespoonfuls of the potato mixture into the skillet. Press to flatten. Cook about 3 minutes on each side, until browned and crisp.
