They offer enough fiber if you eat them with their jackets on.I like them pretty much every which way:
Home fries (w/ onions, peppers optional)
In stews (just ate a beef stew w/ all kinds of stuff in it!)
Mashed
Hash browns
French fries
Even chips, although I don't buy them, not healthy enough
As veges go, potatoes are not high on the health scale, probably not enough fiber for the starch content.
It's said you should eat only organic potatoes, BTW.
