What a coincidence. I just had a couple slices of pickled heart about 20 minutes ago. Delicious. I can see the light at the end of the tunnel: 20 pounds of summer sausage to go & I'm done processing the last deer. Then, I can go out and shoot another this weekend. I still have to get rid of all the bones though.
